The products of Sal de Menorca come from the La Concepción salt flats, currently the only active salt flats in Menorca, located at the bottom of the bay of Fornells. Dating back to 1853, these salt flats were used for almost 200 years to collect virgin sea salt. It was in 2021 when a major rehabilitation of the Menorcan heritage began, with the aim of relaunching the salt flats and marketing their product under the name “Sal de Menorca”. An ambitious project whose objective is to collect salt products by recovering the traditional trade of the salt worker, in a completely manual, natural way and with sustainability criteria and values, resulting in a high-quality final product that carries all the essence of Menorca.
In the salt flats we collect two different products: Fleur de Sel and Virgin Sea Salt.
Flor de Sal is a salt crystallisation with numerous properties, highly appreciated in the world of food. It contains little sodium chloride (only 97%), leaving a 3% margin for other nutrients such as calcium, magnesium and potassium. Its great solubility, its smoothness in the mouth and its crunchy texture make it the best ally to add the final touch of salt to our dishes. It is a way to enrich our recipes, perfectly harmonising all the flavours to offer a unique experience. The harvesting of Flor de Sal requires special attention and care from our salt workers, and it is only collected during the months of May to September. Currently, Sal de Menorca offers, in addition to the Natural Flor de Sal, three more varieties: Flor de Sal with Menorcan herbs (oregano, thyme and rosemary), spicy Flor de Sal (pepper and cayenne) and smoked Flor de Sal.
Virgin Sea Salt, unlike common salt, contains a large amount of minerals and gives a more intense flavour to dishes than ordinary salt (whose production involves industrial processes and carbon dioxide emissions). It is an ideal salt for cooking in the oven or in a pan over low heat.
Salt is an integral part of our diet, as it helps to maintain the correct volume of circulating blood and tissue fluids in the body. The World Health Organisation (WHO) recommends a daily consumption of 5 g of salt, of which 75% is already present in the prepared foods we eat, 15% corresponds to the amount of salt we add during cooking, and the remaining 10% is the amount that each person can choose to add or not to their dishes to enhance the flavour. Therefore, the essential thing is to find an adequate balance of consumption and to be able to do so with a 100% natural product, without additives and, therefore, of high quality, which preserves all the flavour of Menorca.
The process of harvesting and producing salt is completely manual and natural, so there are no industrial systems, mechanization or carbon dioxide emissions. At the La Concepción salt mines we preserve the artisanal and natural process, from the initial harvest to the final packaging, without plastic, and producing as close as possible, maintaining quality and our values.
