Flor de Sal is not made on a production line. It forms. And what makes it special is not a slogan: it is a process that is short to explain and long to wait for.
At the Salinas de la Concepció, the only active salt pans in Menorca, that thin layer of crystals appears on the water when the day allows it. Sea, sun and wind do the work. The salt worker does the rest: watch, choose the moment and gather without breaking what nature has just left on the surface.
How it forms
When the water in the crystallizers concentrates through evaporation, a film of crystals can form on the surface. That is Flor de Sal. Nothing is “added” to force it. It is not washed afterwards to disguise it. It is left to form, gathered and dried.

The usual season runs from May to September. Outside that rhythm, or on a day that is too humid, too still or too unstable, it may not form. That is also part of what it is: a product tied to time, not to a quota.
What changes every day
No harvest is a copy of the previous one. Wind, temperature, humidity and light intensity shape how that layer is born. One day it may form earlier; another, more slowly; another, almost not at all.
That is why Flor de Sal does not follow a formula. Sea, sun and wind make it, differently each day. What is special is not that it “always comes out the same”. It is that it only comes out this way, and only when the conditions align.
A delicate gesture
It is gathered by hand, with the lousse: the traditional long-handled sieve the salt worker has used for generations to lift the surface layer without sinking it or mixing it too much. It is slow work. It has to be done carefully: that film is fragile.

Afterwards it drains in esparto baskets. Later it is spread on drying tables and finishes drying with sun and wind alone. No washing. No additives. The same gesture, summer after summer, in salt pans marked by the sun for more than 170 years.

Special, without magic
There is no need to talk about magic or invented properties. What truly happens is enough: a salt that forms on the surface, depends on the weather, is gathered by hand and keeps the character of a specific day in a specific place.
If that day nature does not offer it, there is no harvest. There is no shortcut. Only sea, wind, sun and time.
