On 12 August 2026, in the middle of the day, the sun will disappear for a few moments over Menorca. It is not a metaphor: it is a total solar eclipse. Over the island, totality (the band in which the Moon fully covers the solar disk) will last about 66 seconds.
Sixty-six seconds do not change a season. But in a salt works, they do change the light under which the work is done.
Why the sun matters here
The Salinas de la Concepció are the only active salt pans in Menorca. For more than 170 years they have followed a rhythm set by the sun. Without it there is no evaporation. Without evaporation, salt does not crystallize. Without that crystallization, Flor de Sal does not form.
The salt worker does not schedule the sky. He watches. He waits. He works with what the day offers: sea, wind and sun. That is why an eclipse is not, for this craft, only a calendar event. It is a real change in the variable that sustains the process.
What you see, and what you notice in the crystallizer
A total eclipse does not “switch off” the day at once. The light falls gradually. Contrast sharpens. The landscape of the crystallizers (water, salt, sky) reads differently for a few minutes, and in the stretch of totality, for a few seconds.
That does not turn the salt into something else. Flor de Sal still forms as it always does: a thin layer of crystals floating on the water when conditions allow, between May and September. What changes that day is the moment: the intensity of light, the perceived temperature, the pace of the working day. Every harvest is already different from the last (wind, humidity, heat, light). 12 August adds a factor that does not repeat in the same way.
The craft is not invented for the occasion
The salt worker will walk the crystallizers with the lousse: the traditional long-handled sieve used for generations to lift that surface layer with care. It is slow, manual work. Afterwards, the Flor de Sal drains in esparto baskets and finishes drying on tables, with sun and wind alone: no washing, no additives.
The formula is not altered because there is no formula. There is process and patience. If the weather that day does not allow Flor de Sal to form, there will be no harvest to keep. Nature decides.

One moment, one harvest
At Sal de Menorca we did not want to create a product “for” the eclipse. We wanted to keep the harvest of that day: a limited, numbered edition of Flor de Sal gathered by hand during the phenomenon, tied to a date, a place and a moment that will not return in the same way.
Some harvests remember a summer.
This one will remember an eclipse.
